Ingredients:

  • 2 tsp oil
  • 1 large onion
  • 1 tsp honey (we recommend our Fir honey)
  • 1 pinch salt & pepper
  • 2 tsp Bourbon Whiskey
  • 115 grams goat's cheese, soft
  • 1/2 tsp thyme, chopped
  • 1 pound lean beef chop
  • 4 slices bacon, cut into small pieces
  • Burger rolls
  • Rocket
  • Ketchup, mustard or mayonnaise at will

Preparation: 
Heat the olive oil in a frying pan. Cut the onion into rings and add to the pan. Season with salt and pepper. Fry briefly and caramelize with the fir honey. Sweat for another eight minutes until the onions are golden brown. Add the bourbon and bring to the boil for a minute.

Mix beef mince, bacon, salt and pepper. Divide the meat into four portions. Fry the patties from both sides for about six minutes until they are nicely juicy.

Halve the burger rolls in the middle and toast briefly from both sides. Spread the patties on the bun and toast with the onions. Add arugula and ketchup, mustard or mayonnaise as desired. Sprinkle some goat's cheese on the burgerand fold the burger with the top halves. Finished!
