Ingredients for the dough:

  • 175 grams flour
  • 1 teaspoon baking powder
  • 1 egg yolk
  • 85 grams of honey (we recommend our Honig-Schmidt acacia honey)
  • 150 grams of butter

Mix ingredients in a bowl, knead and place in a pre-greased springform pan. Form a cake edge along the edge.

Ingredients for the filling:

  • 250 millilitres of milk
  • 70 grams of honey (we recommend our Honey-Schmidt acacia honey)
  • 1/2 packet of vanilla sugar
  • 50 grams of starch

Bring the milk to the boil. Mix the honey, vanilla sugar and starch in a bowl with a dash of milk to a smooth mixture and add to the boiling milk. A thick pudding should be created.

Ingredients for the second filling:

  • 250 grams of quark
  • 1 egg yolk
  • 2 teaspoons lemon juice
  • 2 stiffly beaten egg whites

Mix ingredients and stir under the thick pudding.

Approximately 400 grams of rhubarb (3-4 bars). Peel the rhubarb and cut into small cubes.

Put the quark pudding mixture on the dough and sprinkle the rhubarb over it. Bake the cake at 180 degrees for about 60 minutes.
